Lemon Drizzle Cake Recipe!

Hello Everyone!

Today i baked a cake and it was really fast and easy to make. so thought i could do a post for some simple updates!

Lets get started!

First, the ingredients that you will need is:

3 Large Eggs
2 Lemons
1 Tsp of Baking Powder
170g of Butter (Unsalted)
170g of Castor Sugar
170g of Self Raising Flour
110g of Icing Sugar


Pre-heat your oven in a 180 Celsius!

Method:
  • Zest the whole 2 lemons 
  • Add in the measured butter, castor sugar, self raising flour and 3 large eggs along with the lemon zest

  • Using a mixer, mix with a low speed until you get a nice smooth batter! 
  • Meanwhile, you can line your baking tin with butter or just use a non-stick tin
  • After that you may pour that batter into your pan and put it in the oven!
  • Same temperature for 40 - 45 minutes
  • Make sure to check in on the cake now and then and use a skewer to poke through the cake
  • If it is clean it means its all cooked, if not continue baking. 

  • Meanwhile, you can start making your drizzle
  • Using the 2 lemons that you zest-ed from, cut in halves and squeeze the juice out, u can use a sift to catch all the seeds from falling into the juice
  • Add that 110g of Icing sugar into the juice and use a spoon to stir it all together until it is smooth. as per the photo above.
  • It is suppose to be thick and gooey! 


  • After your cake is cooked you can now take it out of the oven, poke holes through the cake, this is so that when you pour in the drizzle it seeps into the cake and makes it nice and moist!
  • Let the cake cool completely before you remove it out of the pan, and after that you may drizzle the lemon juice all over your cake, wait for about half an hour before you cut the cake to serve.
There you have it! You can also use other fruits like lime or orange or even grapefruit! i did an orange drizzle cake, it was so nice! but make sure your orange is sour, mine was too sweet .
